Buy the grain required by the semolina process
Durum wheat is a distinct wheat type, not a synonym for every hard bread wheat. U.S. Wheat Associates describes durum’s very hard kernels and yellow endosperm in relation to semolina and pasta production. A grain enquiry should name durum wheat explicitly and identify the processor’s intended application.
Keep the purchase description precise: whole durum grain, processed semolina and finished pasta are different products. This guide addresses grain procurement. Durum wheat specifications that buyers should confirm
Prepare a specification for the proposed grain lot. Use the applicable origin’s class and grading terminology, then add the quality limits required by your own mill. Avoid describing the whole purchase with a single protein number.

Use vitreous-kernel terminology correctly
Vitreous kernels have the glassy appearance addressed in durum grading. In the U.S. standards, Hard Amber Durum requires at least 75% hard and vitreous kernels of amber colour; Amber Durum starts at 60% and is below 75%. These are U.S. subclass definitions, not universal international thresholds or complete purchase specifications.
If an offer uses another origin’s system, ask for its named standard and method. A subclass label should be read alongside the full analysis and the processor’s acceptance criteria.

Assess durum wheat for pasta through the processor’s trials
Gluten quantity and quality are relevant to pasta processing. Tests such as Gluten Index can complement protein results, but the buyer should agree how samples are prepared and tested. The aim is a comparable result for the intended process, not the largest isolated number on a certificate.
For a new source, ask the mill to process a representative sample under an agreed procedure. Have the processor record the semolina characteristics it needs and, when relevant, conduct a pasta trial using its own formulation and drying process. Keep the trial report together with the grain-lot reference.
Make acceptance responsibilities explicit. A grain supplier can quote an agreed grain specification, while a mill controls its own processing conditions. If the buyer wants a processing-performance condition in the contract, it needs a defined test protocol and acceptance procedure.

Inspection questions before buying bulk durum wheat
Start with a sampling plan that represents the quantity being purchased. Ask for the sample date, lot reference, sampling party and chain of custody. For an assembled shipment, decide whether tests are needed on individual lots and on the final composite before loading.
An independent inspection brief can cover quantity, cargo condition, sampling and specified laboratory tests. State each task and who will receive the reports. Agree how discrepancies are handled and how sealed reference samples are stored for later comparison.
Visual inspection is useful for physical condition, but it cannot certify every processing characteristic. If enzyme activity is relevant to your specification, falling number is an additional test rather than a substitute for the agreed gluten and milling checks.

Storage and packaging should protect the approved lot
Ask how the grain will be identified and kept separate from other stock between sampling and dispatch. Request the planned storage period and condition checks, and confirm how any movement or blending of the approved lot will be documented.
Agree a moisture specification that suits the route and expected storage conditions. Codex notes that lower moisture limits may be needed for particular climates and transport or storage durations. A generic maximum is therefore not a complete storage plan.
Confirm that bags, liners and cargo spaces are suitable for the intended food-grain use. The Codex standard requires packaging materials that protect the grain and do not introduce unwanted substances, odours or flavours. Specify package weight, marking and closure, and ask for loading-condition records.
For bagged cargo, check that the receiving facility can handle the selected bag or big-bag format. For loose grain, confirm the loading, discharge and receiving-silo arrangements before accepting the shipment format.

Export documentation and a comparable durum quotation
Ask the durum wheat exporter to state the offered grain description, origin, crop year, quantity, inspection scope, packing format and shipment period. Confirm which items are contractual limits and which are informational sample results.
Provide the destination and named delivery place so freight and handling can be assessed. Agree the applicable delivery term, costs included, document requirements and responsibilities before booking. Request the document list for the actual transaction rather than assuming every certificate is automatically included.
